This morning I whipped up a quick and easy breakfast that was loaded with all sorts of good stuff. I had an egg white omelet made with 5 egg whites and filled it with a sliced tomato, some fresh basil and a little bit of feta cheese. On the side, for some good carbs, I added an Ezekiel cinnamon raisin english muffin. After I took the pictures I spread a little peanut butter on one of my muffins to add in some good fats too.

My breakfast stats:

Calories: 290  •  Fat: 2 g  •  Carbohydrates: 41 g  •  Protein: 28 g

For Kevin, I made a variation of his usual big bowl of oats and a cinnamon rasin english muffin with peanut butter on the side. I don’t think I’ve every really figured out the stats on this meal before, so take a look below…it’s a pretty big breakfast.  Good metabolism I guess, because he never gains an ounce. :-)

You might be curious what’s in these so here it is:

Kevin’s Big Bowl of Sweet Potato Blueberry Oats

1/4 c oats
cinnamon
2 Tbs of chopped pecans
1/3 cup blueberries
2 Tbs pureed sweet potato
1 Tbs golden flax seeds
6 egg whites
2 Tbs skim milk

Mix all this together over medium heat until it’s cooked through.

Top with:
1/4 cup of Lifeway Low Fat Blueberry Kefir
1/4 cup lowfat granola
